I got the base recipe from here, and modified it a little bit with inspiration from here. I was making it up a bit as I went along, because it seemed like a fairly idiot-proof recipe, and indeed the results were pretty satisfactory!
What I ended up using:
2 eggs
3 tbsp psyllium fiber (husks)
5 tbsp water
3 tbsp Greek yogurt
2 tsp muscovado sugar
2 tsp maple syrup
3 tsp baking powder
1 banana
Ta-da! You have what essentially tastes like very soft banana bread muffins. (The texture is not quite like normal bread/muffins, but the taste is pretty much banana bread.)
I look forward to experimenting more with this recipe with more inspirations from that second link, like using applesauce or rolled oats or quinoa.
What I ended up using:

- Mix together all ingredients, except the banana, in a bowl.
- Grate banana into the bowl, then mix it thoroughly in. (You could probably mash the banana instead of grating it; I made a judgment call by grating, but this IS tagged "cooking by dummies.")
- Pour the mixture into a greased muffin tin, filling each indentation about 3/4 to 4/5 of the way.
- Bake in the oven for around 20 minutes at 350F.
