I started with a Paleo pancake recipe and started modifying it on the fly between batches, mainly to give it more body. The final recipe ended up...pretty heavily modified. :D

I ended up using:

2 eggs
3 bananas
1/2 cup hot water
1/2 cup oat bran
2 tbsp psyllium fiber
3 tbsp peanut butter
1 tbsp maple syrup
1/2 tsp vanilla extract
pinch of cinnamon

  • Mix the psyllium with the water and let the mixture sit for a few moments to thicken

  • Mash the bananas in a bowl

  • Add all the other ingredients to the bowl, including the psyllium-water mixture

  • Mix them all together

  • Cook in a frying pan like normal pancake mix

I got the base recipe from here, and modified it a little bit with inspiration from here. I was making it up a bit as I went along, because it seemed like a fairly idiot-proof recipe, and indeed the results were pretty satisfactory!

What I ended up using:

2 eggs
3 tbsp psyllium fiber (husks)
5 tbsp water
3 tbsp Greek yogurt
2 tsp muscovado sugar
2 tsp maple syrup
3 tsp baking powder
1 banana

  • Mix together all ingredients, except the banana, in a bowl.

  • Grate banana into the bowl, then mix it thoroughly in. (You could probably mash the banana instead of grating it; I made a judgment call by grating, but this IS tagged "cooking by dummies.")

  • Pour the mixture into a greased muffin tin, filling each indentation about 3/4 to 4/5 of the way.

  • Bake in the oven for around 20 minutes at 350F.

Ta-da! You have what essentially tastes like very soft banana bread muffins. (The texture is not quite like normal bread/muffins, but the taste is pretty much banana bread.)

I look forward to experimenting more with this recipe with more inspirations from that second link, like using applesauce or rolled oats or quinoa.

Just ideated and then tried this. It is indeed delicious and a perfectly acceptable substitute for a traditional grilled cheese sandwich. :D

2 pieces of flat bread
~4 slices of Quickmelt cheese

1) toast bread in toaster
2) arrange cheese slices as sandwich filling between the toasted pieces of bread
3) microwave the sandwich for ~15 seconds

Voila! Warm melty cheese and toasted bread sandwich, a.k.a. a very close approximation of a grilled cheese sandwich, with no butter, no grill, and no trouble at all. :D

Recipe from The Sexy Chef Cookbook, using cauliflower as a rice substitute.

It came out less-than-perfect in my opinion--edible, but could be greatly improved now that I've cooked it once and I have a better idea of what I'm doing, what the process is, how the ingredients go together--so I'll hold off on posting the recipe until I've made a version I'm more satisfied with.

Recipe from here, but using ham instead of bacon (since that's what we had in the fridge).

6 pcs sliced ham
6 eggs
muffin tin
olive oil

  • Preheat oven to 350.

  • Lightly grease muffin tin with olive oil.

  • Tear a piece of ham in half. Arrange the halves so they're lining one of the muffin tin's depressions. Repeat five more times.

  • Crack an egg into each ham-lined cup.

  • Bake at 350 for 15-20 minutes.

A recipe developed by my mom. She gave no exact quantities so I was guessing at proportions, etc., but it turned out delicious anyway!

Chicken thigh
Olive Oil

  • Slice chicken thigh into thin pieces

  • Mix pepper, salt & turmeric on plate

  • Coat chicken on both sides w/ mixture

  • Heat oil in frying pan

  • Fry thigh pieces

1 lb lean ground beef
2 garlic cloves, minced
1 onion, chopped
1 tablespoon chili powder
1 teaspoon cumin
salt and pepper (to taste)
1 (8 ounce) can tomato sauce
1 (16 ounce) can refried beans
Quickmelt cheese, grated
6 (6 inch) flour tortillas (fajita size, about 6-inch)

  • Preheat oven to 350 degrees.

  • Heat a tablespoon or so of Olive Oil in skillet and add garlic and onion. Saute for a minute or two.

  • Add ground beef and cook until browned; Drain.

  • Stir in seasonings and tomato sauce over medium heat; Add refried beans and mix thoroughly.

  • Generously spoon beef and bean mixture into floured tortillas, sprinkle with cheese, roll up and place seam side down in a lightly greased 8" x 8" square casserole dish.

  • Spread any remaining filling on top and bake in oven for 20-25 minutes, or until heated through.

  • Serve with sour cream, guacamole, salsa, etc.
